🛠️ [TASK] : Update Catalyst Chain follower to utilise these new features

Update Cardano Chain Follower to use this branch of our Pallas fork:
https://github.com/input-output-hk/catalyst-pallas/tree/feat/tx-metadata

And then use the new structs: `MultiEraBlockWithRawAuxiliary` and `MultiEraTxWithRawAuxiliary`.
