[Term Entry] Python - NumPy Linear-algebra: .eig()

We would like a new term entry on the .eig() under Linear algebra in NumPy. The entry should go in a new file under docs/content/numpy/concepts/linear-algebra/terms/eig/eig.md.

The entry should include:

• An Example section that provides an example demonstrating the concept in use
