Just pass it to the client constructor for the apiversion parameter

Example:

$builder = new Github\HttpClient\Builder(new GuzzleClient());
$github = new Github\Client($builder, 'machine-man-preview'); //For the integrations early access "application/vnd.github.machine-man-preview+json"
