Update "Controlled generation" doc to include the latest goodies

Rather than updating the doc with the addition of each new model / pipeline, I'd prefer to have a batch 2/3 new models / pipelines, and then update this doc for better visibility. I think maintenance-wise it's also less burderning.

I am happy to do this on a regular basis.
