Refactors the Magento_ConfigurableProduct module to replace $block escaping functions with $escaper escaping functions.

Manual testing scenario:
Verify in the Magento_ConfigurableProduct & Magento_AdminAnalytics modules to replaces $block escaping functions with $escaper escaping functions after applying the PR changes.
Before: ✖️ 

After: ✔️

Additonally tested:
Verified the Configurable product functionality on the frontend.

No additional manual test case is required in regression cycle as this PR is related to the refactoring of the codes.
Since the builds are failing, moving this to extended testing.
